I pointed the flip camera at Liz and watched in amazement at how she walked us through the family tradition of hand tossing Syrian salad with one take. 

"Nothing can replace fresh garlic and that's why everybody loves my food. I use a lot of fresh garlic," Liz nonchalantly explains into the camera. "The good news is, two garlic cancels each other out. As long as everyone in the room is
eating garlic, no one is going to get offended."

With her poise, magnetic smile and conversational finesse in front of the camera, Liz was a natural. A Food Network star in hiding in East Grand Rapids. I glanced at her proud husband, Rich, and cousin, Tanya after the take, as the three of us marveled at how Liz simply owned the moment. In two minutes and thirty seconds, she educated us on the benefits of garlic and lemon (she never gets sick), the magic of  a micro plane, her secrets to seasoning and the best "tools" for mixing salads. No sweat.

Liz comes from a family of avid cooks. She talks endlessly about cooking sessions with her family - her mom, her aunts and great aunts. You can tell that the kitchen was the center of her family's gatherings. Where recipes were passed down from one generation to another. Their family kitchen was nirvana with the scent of fresh herbs and orange blossom water.  She is as comfortable in the kitchen as Tom Brady is in Gillette stadium. No sweat.

I just sat in the kitchen and observed how the master worked her passion. She poured me a glass of orange blossom lemonade with fresh mint and lemon, while Tanya, without missing a beat, topped my glass with a generous pour of Absolut Vanilla. We discussed the best way to make hummus, savored the labna (yogurt with za'atar) with flat Syrian bread, and indulged in the meat stuffed grape leaves. I admired the puffy pink peonies on the table and how the afternoon light romanticized the simple table setting on this picture perfect day. Cooking is as much the use of the best available ingredients, and literally, the hand that made the meal. It was mesmerizing to see how Liz's bare hands dug softly into the bowl of salad through my camera viewfinder as if everything inside the bowl were destined as one. And just like that, the bowl was transformed into a beautiful mediterranean salad. No sweat. No sweat, at all.

Liz's  Lebanese Meat Stuffed Grape Leaves

1 2 lb. Jar Grape Leaves
1 lb Ground Sirloin
1 c. Long Grain White Rice - Rinsed
1 Tbs. Crushed Garlic
1 Tsp. Salt
¼ Tsp. Pepper
Juice of 2 Lemons
2 Celery Stalks – cut into 3 (optional)
5 Cabbage Leaves (optional)
1 Tbs. Dried Mint

Line a large pot with celery ribs and loose cabbage leaves. Rinse off grape leaves and place on a plate. In a large bowl, combine ground meat, rice, the juice of 1 lemon, garlic, salt and pepper.  One grape leave at a time, place the leaf flat on a plate and add 1 tbs. of meat mixture near stem. Form meat into long cigar shape then roll the grape leave starting at the stem all the way to the top. No need to fold in sides.  Line rolls in pot, alternating direction with each layer, until the pot is filled ¾ of the way or you’ve used all your leaves.  Cover grapes leaves with a small plate turned upside down to keep them from moving and to weigh it down.  Add chicken broth to the edge of where the leaves end and add juice of second lemon and dried mint.  Cover pot with lid and bring to a simmer. Reduce heat to low and simmer an additional 20-30 minutes or until rice is fully cooked.  Serve with pita bread and plain yogurt.

Argh!!!

Hoping you had a wonderful weekend!

I am frantically trying to pull myself out of the hole I'm in...

I spent the last 5 days finishing up my photos and descriptions for my mailing on Tuesday, only to POOF!... lose them all by some wrong key that I pressed. Oh yeah. LOTS of items. Don't we just love when that happens? And, add in my 6 hour day at the flea market today hauling furniture, and you have one frustrated, frantic and tired woman!

Hoping I can cram like the good ole school days and have this mailing ready for Tuesday. Sigh.

Wishing you all a great week ahead and don't sweat the small stuff, right?

It's a Bird! It's a Plane! No, it's Superfriendz!

The Heart of West Michigan United Way's street team, MI Superfriendz, took advantage of the Pure Michigan weather this afternoon by conducting a photo and film shoot atop the JW Marriott helipad to promote the group's upcoming Radio Flyer book drive for Schools of Hope. The Superfriendz had other reason to be jubilant as Business Review West Michigan just announced the nomination of the MI Superfriendz for its Innovation Michigan award for the group's creative use of social media to promote awareness for many of United Way's mission in West Michigan.

The Superfriendz would like to thank Jeff Barrett of United Way for organizing the shoot. 

Be on the lookout for these red Radio Flyer wagons in a cool place near you.

And I Thought it Was From Aging...

Do you ever feel like you're just floating from thing to thing? Forgetting a thought in mid-stream?

Today I read (actually listened) to this interesting article on NPR about Nicolas Carr's latest book, The Shallows: What the Internet Is Doing to Our Brains. It kind of scared me actually. Carr started research for The Shallows after he noticed a change in his own ability to concentrate. Hmm...

I assumed that my bouts of forgetfulness were due to aging. I'm constantly forgetting a thought during the middle of a sentence, or on my way to do something only to forget what it was!

Whether it's the internet or simply aging, I can tell you this. Some distractions make me a bit nuts such as...

really small typeset on websites or blogs so you have to squint to read it...

Perhaps if the font was larger, we would be able to focus better.

Reading words against a black background. That kinda drives me crazy.


Ads that pop up and flash in the middle of your screen out of nowhere!


Those are just a few. We each have our own internet "pet peeves." I haven't figured out a remedy except to read more books and magazines, and of course, your wonderful blogs. And, take walks away from the computer. I refuse to get a Kindle. Ever.

Thanks for letting me vent. I was really thinking it was an age thing, which it could very well be, but the jury's still out on that one. I am off to read a book...the kind with pages that you can turn.

The Disco Shirt that Changed the World of Dance!

It has been two weeks since my infamous debut on the Dancing with the Make-A-Wish Stars event. Wow, what a terrific experience on many levels! I enjoyed myself to the point of actually missing the practices and the jitters of finally getting on stage in front of hundreds of people cheering you on. The enthusiasm of the audience was electrifying and it helped us amateur performers with our confidence.

I finished second to the dazzling performance by Peter Stuursma who deserved kudos for his charismatic stage presence. But truly, all the dancers deserve awards for devoting their time and their personal pride to raise awareness and funding for West Michigan Make-A-Wish Foundation

My sincere compliments to Molly Thompson, my professional dance partner, for enduring the task of teaching this neophyte how to disco and swing on stage. Molly, you're the best! My hats off to Casey Reed, owner of Salsalogy Dance Academy for all the support and patience with us dancers. Casey and Molly, you definitely pulled off one heck of a show.

I highly recommend attending this event next year for the production of the event is world class. To producer Cara Ontiveros, how can anyone top this event? From funniest intro video ever to the theatrical lighting and staging to all the million details that come with an event like this. To Blue Water Technologies for providing all the audio visual  and for doing miracles to make us dancers look good on stage. And to Elie Andrus and the board of directors for Make-A-Wish, for the constant support and genuine enthusiasm for the program. 

Finally, I am overwhelmed from the outpouring of support from my family and friends. One of my goals for the event was to raise the most money for Make-A-Wish, and yes, we did! To this day, the donations still keep coming! That is incredible. I am very humbled and grateful to have been a part of this wonderful event.

Here are 6 good reasons to visit six.one.six restaurant

The six.one.six restaurant inside the JW Marriott Grand Rapids changes menus every eight weeks. Chef de Cuisine of six.one.six, Joel Wabeke, has done an incredible job of providing consistency in food profiles while delivering on the unexpected combinations on this ever changing menu. Not an easy task. But it sure gives all the loyal followers of this restaurant reasons to come back. 

The restaurant is enjoying a 40% increase in dinner covers to last year. An incredible feat given the economic conditions. The food is certainly the highlight and our compliments to JW Executive Chef Andrew Voss and his team for their discipline in delivering a consistent product at a reasonable price.

My family tried out the new menu which started last week. Let's just say we were not disappointed. This is the first in a series of posts highlighting the items on the new menu. Enjoy.

# 2 - Wagyu Beef "Brisket"
texas style barbeque . jalapeno cornbread . summer slaw $11. 
This is a very deliciously flavored piece of meat that we actually 
ordered a second serving. You won't find any true southerners 
complaining about the cornbread.
#3 - Grilled Calamari and Chorizo
medjool dates . parsley white bean puree .  lemon oil $10
I prefer my calamari grilled or sauteed without the breading and this
version hits the mark. The house made chorizo is succulent. The puree
balances all ingredients into one fabulous dish.
# 4 - Artisan Cheese Flatbread
beemster . raspberry-sherry preserve . arugula $8
My kids enjoyed this flatbread tremendously especially the sweet-tart
flavors of the preserve. 
# 5 - Crispy Squash Blossoms
capra blue . tasmanian leatherwood honey . smoked sea salt $12
This was my wife's favorite. Lightly crisp on the outside and a
cheese surprise inside. Now, how can you beat that?
# 6 - Pastured Rack of Veal
creamed spinach . wild mushroom .  telicherry pepper spaetzle . milk foam $26
A hearty dish with layers of flavors. I couldn't get enough of the 
wild mushroom on this dish.
